Find an article or case study on a restaurant or other food service outlet that has responded to consumer demands for healthier options. Make sure to share if these changes reduce calories, change portion sizes, provide for a consumers perception being “healthier”, or reduce additives/chemicals. Discuss the thought process that you think the owners or managers went through when deciding on these changes. Include thoughts on the social, financial (purchasing and pricing) and marketing implications of their decision making process.

Also provide a link to and summarize the article in a few paragraphs. The same article cannot be used by multiple students. You may “bookmark” your article at the start of the week by inputting your name and abbreviated title [first 3 words] into title line of forum post, but any bookmarked article is fair game after Wednesday.  If you claim an article and fail to post by Thursday, a classmate can claim that article.
